Drake’s Coffee Cake Copycat Muffins

These jumbo Drake’s Coffee Cake Copycat Muffins are WAY better than Drake’s coffee cake. I say that as someone who adored the iconic lunchbox snack. These have a pound cake base that stays super moist and lots of crunchy streusel on top. You can make these in any size pan or shape muffin tin you want, just adjust the baking time and remember to grease the pan.

Copycat Drake’s Coffee Cakes

The iconic Drake's coffee cakes were an early 2000's lunchbox staple. The treat came back on the market in 2017 but for some reason, it just is not how I remember it. So, I created an even better recipe!

Equipment

  • Standmixer

Ingredients

  • 1 and 2/3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cups butter softened
  • 4 oz cream cheese softened
  • 1 1/2 cups sugar
  • 3 large eggs at room temp
  • 1/2 teaspoon vanilla extract

Streusel Ingredients

  • 1 and 1/4 cups all-purpose flour divided
  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter melted 1 stick

Instructions

  • Preheat oven to 350°F.
  • Prepare jumbo muffin tin with jumbo cupcake liners. You can use a standard muffin tin. Just follow the same directions and only fill the tins halfway. Bake for about 12 minutes but check for doneness at 10 minutes.
  • Make the streusel topping. In a medium bowl, mix all of the dry streusel ingredients together.
  • Pour the melted butter on top of the dry mixture and mix with a fork. Mix lightly so that big chunks of streusel form! Set aside.
  • Make the cakes
  • In a small bowl, combine flour and salt- set aside.
  • In a stand mixer or large bowl with a handheld mixer, cream butter and cream cheese until smooth. Add sugar. Beat on medium-high speed 5 minutes. Add in eggs and vanilla. Mix for 1 minute. Add in flour. Mix until combined. The batter will be thick! Using a cookie scoop transfer batter into 3 inch cake pans. Only fill up your tins HALF way. You want an even amount of streusel and cake. Then top your batter with the streusel. Bake for about 20 minutes. You can tell they are done when you insert a toothpick or knife into the center and it comes out with just a few crumbs (no batter)! Let cool for 1 hour.
