Preheat oven to 350°F.
Prepare jumbo muffin tin with jumbo cupcake liners. You can use a standard muffin tin. Just follow the same directions and only fill the tins halfway. Bake for about 12 minutes but check for doneness at 10 minutes.
Make the streusel topping. In a medium bowl, mix all of the dry streusel ingredients together.
Pour the melted butter on top of the dry mixture and mix with a fork. Mix lightly so that big chunks of streusel form! Set aside.
Make the cakes
In a small bowl, combine flour and salt- set aside.
In a stand mixer or large bowl with a handheld mixer, cream butter and cream cheese until smooth. Add sugar. Beat on medium-high speed 5 minutes. Add in eggs and vanilla. Mix for 1 minute. Add in flour. Mix until combined. The batter will be thick! Using a cookie scoop transfer batter into 3 inch cake pans. Only fill up your tins HALF way. You want an even amount of streusel and cake. Then top your batter with the streusel. Bake for about 20 minutes. You can tell they are done when you insert a toothpick or knife into the center and it comes out with just a few crumbs (no batter)! Let cool for 1 hour.
