Eggnog Sugar Cookie Recipe
Normally, I am not a fan of a cake-y cookie, however there are just a few exceptions. The first is a very polarizing cookie, the Lofthouse Cookie. These cookies are found in almost every grocery you can think of and are characterized by their thick, sweet, almost dry frosting. Now before I go talk you out of THIS eggnog sugar cookie recipe, let me tell you, this is like one of those cookies with massive improvements. We created a slightly cake-like cookie with a just a bit of eggnog flavor that is not too dry-it is just right. The frosting is a whipped eggnog frosting with a bit of nutmeg to really bring out those eggnog notes. This is one of those cookies that is a must in my holiday cookie box every year. What is in the Eggnog Sugar Cookie Recipe?
We’re talking about a cookie that’s soft but not cake-y, rich but not overwhelming, and festive but not “ugly Christmas sweater” levels of extra. The nutmeg-spiced eggnog frosting? That’s just the star on top of the Christmas tree. Here is everything you need.
- All Purpose Flour
- Eggnog (NOT low-fat, you need full fat eggnog here)
- Unsalted Butter
- Powdered Sugar
- Rum Extract
- Vanilla Extract
- Kosher Salt
- Baking Powder
- Nutmeg
Whipped Eggnog Frosting
Wait until your cookies are completely cool (patience is a virtue!) before frosting them. If you frost while they are hot, this frosting will turn into a loose glaze melting all over the cookie! ITo whip the frosting up as thick as possible, I do suggest a stand mixer or hand mixer. It should look thick, smooth, and glossy! Sprinkle a little nutmeg on top along with sprinkles for a festive look on this eggnog sugar cookie recipe!
Tips for soft sugar cookies
- Use room temperature ingredients. Cold eggs and butter are like Grinches in your cookie dough.
- Don’t skimp on the nutmeg – it’s what gives these cookies their signature eggnog flavor.
- Let cookies cool completely before frosting, unless you’re going for the melted snowman look.
How can I store these cookies? Can I freeze them?
The best way to extend the shelf life of these cookies is to pack them in an airtight container and place them in the refrigerator. Since they have a frosting made with eggnog, room-temperature storage is NOT advised. You can also freeze the scooped dough balls for up to three months!
Can I use any eggnog?
Well, no. You cannot use low-fat eggnog as that will not add enough fat to the cookie recipe or to the frosting (fat is what allows it to whip up). My only advice is to use traditional full-fat eggnog that is NOT boozy. As delicious as a traditional boozy eggnog is, this recipe was not tested with the addition of booze and therefore, it will change the structure of the cookie. I promise if you make these as written with a store-bought eggnog you will love them. These eggnog sugar cookies are soft, perfectly spiced, and topped with a sweet eggnog-y frosting. If you plan on leaving them out for Santa, bringing them to a cookie exchange, or eating them yourself, they are the perfect seasonal treat.
Ingredients
Cookie Ingredients
- 6 tablespoons unsalted butter 85 grams, room temperature
- 2/3 cup granulated sugar 133 grams
- 2 large egg yolks
- 1/2 cup eggnog
- 1 teaspoon vanilla extract
- 1/2 teaspoon rum extract
- 2 cup all-purpose flour 240 grams
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
Eggnog Whipped Frosting
- 2 1/2 cups powdered sugar 285 grams
- 1/3 cup egg nog 80 grams (this will vary based on the eggnog)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon rum extract
- 1/4 tsp nutmeg
Instructions
- Preheat the oven to 350F. Line a cookie sheet with parchment paper and set aside
- In the bowl of a stand mixer fitted with a paddle attachment OR with a large bowl and a hand-mixer combine the butter and the sugar. Cream together for at least 3 minutes in the stand mixer or 5 minutes with the hand mixer. Scrape the sides of the bowl with a non-stick spatula and add in the egg yolks and both extracts. Mix again. Add in the eggnog and mix again, mixture may look curdled if the eggnog is not room temperature. That is ok!
- Add in flour, baking powder and salt. Mix just to combine. Dough will be very soft and sticky. Using a cookie scoop (or your hands) scoop out 2 tablespoon sized balls of dough. Place the dough on the lined cookie sheet and bake for 6-8 minutes, until tops look set and cookies no longer look "wet" on top. Remove from oven and let cool.
Make the Frosting
- Combine all ingredients in a large bowl (or a stand mixer bowl fitted with a paddle attachment). Using a hand-mixer whisk until frosting appears thick and smooth. Frost the cookies with about 1 tablespoon of frosting each. Let the frosting set and top with sprinkles! Enjoy!
