Well, friends, if you’re reading this, it means this recipe is FINALLY live again. Tiramisu fudge was one of my most popular Christmas fudge recipes of 2024, but I took this post down at the end of the season. Despite this being an incredible dessert with dark chocolate, espresso, mascarpone, and a classic cocoa powder top, there were a few issues.

For every person who adored the recipe, there was one person who had trouble with the fudge not setting. Trying to recreate the issues people had over the past year, I could not figure it out. Finally, I nailed it. Now listen up, the kind of chocolate you use MATTERS. If you use a milk chocolate chip here instead of the dark chocolate like the recipe says, this fudge will be very loose and never set. So, even though the original recipe had the percentage, you will now see that the recipe specifies what brand I use. The other change is just a little bit less condensed milk in the top layer so we can get more mascarpone flavor.

Can I make this Tiramisu fudge in the microwave?

Yes! This recipe is designed to be a super-easy microwave fudge for the holidays. Make sure to microwave in increments so you don’t scorch any of the chocolate.

Can I add more coffee?

You can always add more coffee to these because we are using instant espresso granules- so they won’t affect the texture of the fudge. They must be dissolved into the fudge to avoid it becoming grainy. I used just 2.5 tablespoons of Café Bustelo, but I also tested with this brand and needed about 4 tablespoons to get the flavor I wanted.

Tiramisu Fudge

Equipment

  • 1 8X8 pan
  • 2 sheets parchment paper
  • 1 Offset Spatula

Ingredients

Chocolate Layer

  • 12 oz sweetened condensed milk
  • 12 oz dark chocolate chocolate chips * I use the 72% Ghiradelli chips
  • 3 tablespoons mascarpone cheese 42 grams
  • 4 tablespoons instant espresso granules *depending on the brand of espresso, this can vary in taste. If using very Cafe Bustelo use 2.5 tablespoons
  • 1/4 tsp kosher salt

White Chocolate Mascarpone Layer

  • 12 oz white chocolate chips * I use the Ghiradelli white chocolate chips
  • 3 tablespoons mascarpone cheese *tested with Bel Gioso and Whole Foods brand mascarpone
  • 5 oz sweetened condensed milk (1/4 cup + 2 tablespoons) about 1/3 of the can
  • 1/4 tsp kosher salt

Topping

  • 1/4 cup cocoa powder

Instructions

Chocolate Coffee Layer

  • In a large glass bowl, add chocolate chips, 12 oz condensed milk, mascarpone cheese, instant coffee granules, and salt. Melt in the microwave in 30-second intervals (if you have a powerful microwave, start with intervals of 10-seconds to avoid burning the mixture), stirring in between until completely melted and smooth.
  • Pour chocolate fudge into an 8×8" pan lined with parchment paper and sprayed lightly with non-stick cooking spray. Spread evenly. Place in the refrigerator while you prepare the next layer.

White Chocolate and Mascarpone Layer

  • In a separate large heat proof bowl, heat the white chocolate chips, mascarpone, condensed milk and salt in the microwave in 30-second intervals,(if you have a powerful microwave, start with intervals of 10-seconds to avoid burning the mixture)stirring in between until completely melted and smooth.
  • Scoop white chocolate layer directly on top of chocolate layer. You can dollop or just plop it on and then spread it carefully into an even layer.
  • Refrigerate for at least 3 hours or until set. Cut into small squares and sift cocoa powder on top. Store in a sealed container separated by parchment. The chocolate layer will be slightly softer than the white layer, that is okay! Fudge can stay in an airtight container in the refrigerator for up to 1 week.
