There is a famous scene in the movie Parent Trap where Lindsay Lohan tells other Lindsay Lohan that the only way to eat an Oreo is to dip it in peanut butter. Now, I would have to agree that this is the proper way to eat an Oreo but… all ways are acceptable in my book. In this Parent Trap Ice Cream Cake (Peanut butter Oreo Ice Cream Cake) we stack layers of gooey brownie, peanut butter ice cream, homemade Oreo butter, MORE ice cream and crumbled oreos to create a masterpiece that both Linsday Lohan’s would love (I think).

How do I make an Ice Cream Cake?

When creating a tall ice cream cake it is pivotal that you have some sort of barrier to keep the layers contained as you build it. Unlike a traditional cake with frosting, this cake is prone to slipping, sliding and melting. The frosting adds structural integrity to the layer cake that ice cream cannot (until it is frozen)!

Do I need special Equipment?

Yes and no. To make the cake tall like the one in these photos, using a cake ring and acetate strips is key. The cake ring is used to create the shape of the cake and the acetate will keep all those layers in the perfect shape!

If you do not have these special tools, use a 6 inch cake pan and line the inside MULTIPLE times with cling wrap. Leave enough overhang that you can lift the cake from the pan. Additionally, all of these cake layers will NOT fit inside a 6 inch cake pan. Instead, prepare two 6 inch pans and stack 1/2 of the cake in each. Once each side is frozen solid, remove from their respective pans and stack into one large cake.

Equipment

  • 1 6 inch cake ring
  • 1 acetate roll
  • saran or cling wrap

Ingredients

1 8X8 pan of brownies (underbaked)

  • 1 pint peanut butter ice cream
  • 1 pint cookies and cream ice cream

Peanut Butter Layer

  • 1 cup peanut butter
  • 2 tbsp refined coconut oil

Oreo Cookie Butter Layer

  • 1 recipe oreo butter OR cookie butter of your choosing

Oreo Crumble Topping

Instructions

  • Place a cake board on a clean work surface. Place the cake ring down and line the inside of the cake ring with acetate, making sure to tape the seam together
  • Cut a 6-inch circle from your already-made brownies and place it inside the cake ring and acetate. This is your first layer!
  • Next, layer the pint of peanut butter ice cream using a bent spoon so you can even out the layer. Freeze after this step for 15 minutes
  • Spread the Oreo butter into a thick layer on top of the ice cream and smooth out the top.
  • In a microwave-safe bowl, combine peanut butter and coconut oil. Stir until smooth.
  • Pour peanut butter mixture on top. Return the cake to the freezer for another 20 minutes until the peanut butter layer is frozen solid.
  • Top the frozen peanut butter layer with your last pint of ice cream and smooth out the top. Add the crumbled-up oreos ( you can smash these with a rolling pin in a plastic bag) and return the cake to the freezer for at least 3 hours to set.
  • Let sit at room temperature for 10 minutes before slicing and serving!
