Lemon Swirl Sugar Cookie Bars
Lemon Swirl Sugar Cookie Bars are my go-to dessert when I want something that feels like sunshine on a plate. Soft, chewy sugar cookie base. Luscious lemon swirl. No scooping, no chilling. Just press, swirl, bake.
These bars are perfect for spring parties, summer picnics, or honestly, anytime you need a little zing in your day. Plus, they slice up beautifully, making them ideal for bake sales or sharing with friends.These were originally called “Lemon Meringue Pie Sugar Cookie Bars” but that felt like too much- so we shortened it. Of course, they were inspired by my Lemon Meringue Pie Cookies (which are delicious btw) but these are for when you just don’t feel like cutting out the scooping, rolling, and chilling.

How do you make Lemon Swirl Sugar Cookie Bars?
For the sugar cookie base:
- Unsalted butter,
- Granulated sugar
- 1 large egg
- All-purpose flour
- Baking powder
- Salt
- Lemon Curd
- Marshmallow Fluff
For the lemon curd:
- Homemade Lemon Curd is always my recommendation- I love using Queen Sally for this
- If you are going to purchase, I recommend the Bonne Maman Brand!
Pro Tips for Perfect Bars
- Use room temperature ingredients for a smooth, even dough.
- Homemade lemon curd will elevate these even more—especially if you like a tangier twist.
Storage & Make Ahead
Store your Lemon Swirl Sugar Cookie Bars in an airtight container at room temperature for up to 2 days. Normally, a sugar cookie bar would last longer, but the lemon curd can make the cookie soggy so it is best to eat these fresh!

Ingredients
- ½ cup unsalted butter 113 grams, room temperature
- 3/4 cup granulated sugar 150 grams
- 1 egg room temperature
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 ¼ cup all-purpose flour 150 grams
- 1/4 cup lemon curd
- 1/4 cup marshmallow fluff
Instructions
- Preheat the oven to 350 F.Line an 8X8 square pan with parchment paper, making sure to leave parchment overhang on both sides of the pan so you can lift the bars later!
- In a small bowl combine flour, baking powder, and salt, set aside
- In a separate large bowl, use a hand mixer to cream the butter and sugar. This should take about 3 minutes. Scrape down the sides of the bowl half way through and continue to mix until light and fluffy. Scrape the sides of the bowl with a nonstick spatula again
- Add in egg and mix again until combined
- Scrape down the sides of the bowl with a nonstick spatula and the dry ingredients you set aside ( flour, baking powder and salt). Mix until thick dough forms
- Scoop batter into the prepared pan and smooth top with an offset spatula.
- Using a spoon, dollop lemon curd and fluff on top of smoothed dough. Using a knife, swirl the the top of the bars.
- Bake for 15-20 minutes or until the edges are golden brown. If baked too long, the fluff will burn so make sure to check at 15 minutes.
- Let cool for 20 minutes. Then cut and serve!
